Honey Apple Sauce Bread
(Seriously edited version from podcast. For the full flavor of this recipe, listen to Episode 3 of “A Woman with a Very Large Knife,” which you can find in the podcast section of my website.)
This is a modified recipe from a book called Fruits of the Desert, by Sandal English.
Ingredients:
- 2 eggs
- 1/2 cup shortening
- 1 cup honey
- 2 cups flour
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1 tsp each of cinnamon and nutmeg
- 1/2 tsp each of cloves and allspice
- 1 cup apple sauce
- 1 cup chopped pecans
- 3/4 cup of chopped dried fruit: apricots, raisins come to mind
So preheat that oven you keep planning to clean to 350. Grease a loaf pan with shortening.
Mix your dry ingredients (flour, spices, salt, soda) in one big bowl, and set aside. Cream the honey, eggs and shortening in a different bowl, and then slowly blend in the dry, alternating with the applesauce. Finally, toss in the nuts and dried fruit.
Bake for 60 minutes.
